Chicken with artichoke and lemon

I get my chicken legs in Trader Joes or Sprout. They are less than 5$ and are free-range organic drumstick. Stop buying junk food such as chips and soda and invest on organic whole foods such as veges and fruits and seeds and nuts and real grass fed organic meats. 

Here I put everything together in a crock pot:

Slices of lemon
Artichoke with herbs ( I got the pickled in a jar from Trader Joes. 
Ginger minched
2-3 Cloves of garlic or 1tsp garlic powder, 1tsp garlic onion or use real onion
Tomatoes sliced
Mushroom 
Salt, pepper, bay leaves, basil
Non gmo fish sauce, I put 3-4 tablespoons
(All including spices are organic and non-gmo)
Place some of the spices and lemon slices at the bottom to make sure it penetrates the chicken while cooking in its own juice and spread them all over also. Crockpot in high heat for 4 hours or 6-8 hours in low heat. 

Taste and adjust salt.
Enjoy, simple.

Cauliflower rice Low carb

I cooked my Dad's chicken adobo minus the sugar and I miss rice so I made some. 
I got this 3 cup processor. It is small but perfect. Chop the cauliflower put them in the food processor.
Pulse about 7-10 times. This one is just on my thumb so easy to pulse. 
Grain look
I usually sauté it in olive oild and garlic but my chicken adobo is tasty already. So I put a table spoon or 2 of water to steam in medium to low heat. 
You can add broth if you wish instead of water. 
Steam while the adobo is finishing. 
Enjoy. Simple.
